Students will have to learn the general outlines contained in the so-called "Hygiene Package": This rule is constituted by four community regulations (852/2004, 853/2004, 854/2004, 625/2017) and regulation 178/2002 delve into and food safety issues by harmonizing previous national regulations with community standards. The objective of these rules is to guarantee the highest possible level of protection of human health with the system of controls along the entire food chain.
