abstract:
The paper aims to illustrate the role of food as one of the main elements in the great changes made to the monastic complex of Trisulti, proof of the San Bruno order in the Lazio region. The main events in the history and transformations of the Carthusian monastery, in which the food with its production, processing and consumption played a fundamental role, are retraced in a compara- tive perspective with the other Carthusian houses located in Southern Italy.
