The lessons include the definition of energy needs in physiological conditions through the study of the determinants of daily energy expenditure and the main methods of estimation and measurement; the caloric and non-caloric components of the diet: carbohydrates, fats and proteins, vitamins and mineral salts, for each of which the chemical and nutritional characteristics, food sources and requirements are presented. The issue of evaluating the state of nutrition is then addressed by outlining the basic and advanced steps including the study of body composition. As regards the athlete's nutrition, a lesson is dedicated to the specific characteristics of this condition and a lesson to the topic of food supplements both in general and specific for sport. Finally, the course presents the main guidelines for a healthy diet for the Italian population aimed at promoting and maintaining a good state of health over a long period of time for the prevention of chronic degenerative diseases related to the state of nutrition. The topic of sports nutrition is also addressed based on the different types of sport and objective with the management of meals and supplementation before, during and after physical exercise. Furthermore, the problem of eating disorders in athletes is mentioned.
